2 ripe avocados

1 can (5 oz) tuna in water, drained

2 tablespoons mayonnaise (or Greek yogurt for a healthier option)

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1/4 cup diced red onion

1/4 cup diced celery

1 small jalapeño, seeded and finely chopped (optional for heat)

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Cherry tomatoes, halved (for garnish)

Prepare the Avocados: Cut the avocados in half, remove the pit, and carefully scoop out a small amount of the flesh to create more space for the filling, keeping the skin intact. Set aside the scooped avocado flesh for later use.

    Make the Tuna Filling: In a medium mixing bowl, combine the drained tuna, mayonnaise (or Greek yogurt), Dijon mustard, lemon juice, diced red onion, diced celery, and jalapeño if using. Mix until well combined. Season with salt and pepper to taste.

      Incorporate Avocado Flesh: Chop the reserved avocado flesh and gently fold it into the tuna mixture, being careful not to mash it too much, so you maintain some texture.

        Stuff the Avocados: Spoon the tuna mixture generously into each avocado half, packing it in well to fill them up.

          Garnish: Top the stuffed avocados with a sprinkle of fresh cilantro or parsley. Add halved cherry tomatoes on the side for a colorful presentation.

            Serve: Enjoy immediately as a refreshing lunch or snack, or cover and refrigerate for up to an hour before serving.
