Strawberry Spinach Pasta Salad

Ingredients
  

8 oz. farfalle (bow-tie pasta)

4 cups fresh baby spinach, washed and dried

1 ½ cups strawberries, hulled and sliced

½ cup crumbled feta cheese

½ cup walnuts, toasted and roughly chopped

¼ cup red onion, thinly sliced

½ cup balsamic vinaigrette (store-bought or homemade)

Salt and pepper to taste

Optional: fresh basil leaves for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the farfalle pasta and cook according to package instructions until al dente. Drain and rinse under cold water to halt the cooking process. Set aside.

    Prepare the Walnuts: While the pasta is cooking, toast the walnuts in a dry skillet over medium heat for 4-5 minutes, stirring often until fragrant and lightly golden. Remove from heat and let cool.

      Mix the Salad: In a large mixing bowl, combine the cooked pasta, fresh spinach, sliced strawberries, crumbled feta cheese, toasted walnuts, and red onion. Gently toss to combine the ingredients without crushing the strawberries.

        Dress the Salad: Drizzle the balsamic vinaigrette over the salad. Toss again to ensure everything is well-coated. Season with salt and pepper to taste.
