Ingredients

For the cheesecake filling:

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1/4 cup heavy cream

For the strawberry filling:

2 cups fresh strawberries, hulled and sliced

3 tbsp granulated sugar

1 tbsp lemon juice

1 tsp cornstarch (optional, for thickening if needed)

For the rolls:

1 package (8 oz) refrigerated crescent roll dough

1/4 cup unsalted butter, melted

1/4 cup graham cracker crumbs

1/4 cup chopped fresh strawberries (for garnish)

Whipped cream (for serving)

Instructions

Prepare the Strawberry Filling: In a medium bowl, combine the sliced strawberries, granulated sugar, lemon juice, and cornstarch (if using). Toss until the strawberries are well-coated. Let them sit for about 30 minutes to macerate, allowing their juices to release.

Make the Cheesecake Filling: In another bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add the powdered sugar and continue mixing until well combined. Stir in the vanilla extract and heavy cream until the mixture is light and fluffy.

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Assemble the Rolls: Open the crescent roll dough and unroll it on a clean surface. Pinch the seams together to create a single rectangular sheet. Brush the melted butter evenly over the dough.

Spread the Cheese and Strawberries: Spread the cheesecake filling evenly over the dough, leaving a small border around the edges. Top with the macerated strawberries, spreading them out evenly.

Roll Up the Dough: Starting from one long edge, carefully roll the dough into a tight log. Use a sharp knife or pizza cutter to slice the log into 1-inch wide pieces, yielding about 8 rolls.

Bake the Rolls: Place the rolls cut-side up on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes or until golden brown.

Cool and Serve: Once out of the oven, allow the rolls to cool on the baking sheet for about 5 minutes. Transfer to a serving platter and sprinkle with graham cracker crumbs and chopped fresh strawberries. Serve warm with a dollop of whipped cream on top.
