Ingredients

4 boneless, skinless chicken breasts

1 cup fresh strawberries, hulled and sliced

1/4 cup balsamic vinegar

1/4 cup honey

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions

Prepare the Marinade: In a medium bowl, combine sliced strawberries, balsamic vinegar, honey, olive oil, minced garlic, thyme, salt, and pepper. Use a fork or a whisk to mash the strawberries slightly and mix all ingredients thoroughly.

Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour half of the strawberry marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 1-2 hours for maximum flavor.

Preheat the Grill or Oven: If grilling, preheat the grill to medium-high heat. If baking, preheat the oven to 375°F (190°C).

Cook the Chicken: Remove the chicken from the marinade, shaking off any excess. For grilling, place the chicken directly on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). For baking, place the chicken in a greased baking dish and bake for 25-30 minutes.

Prepare the Glaze: While the chicken is cooking, pour the remaining marinade into a small saucepan. Bring it to a boil over medium heat, then reduce the heat to low and let it simmer for about 5-7 minutes, or until it thickens slightly.

Glaze the Chicken: Once the chicken is cooked through, remove it from the grill or oven and brush the thickened strawberry glaze over the top. Let the chicken rest for about 5 minutes before serving.

Serve: Plate the chicken and drizzle with any remaining glaze. Garnish with fresh basil if desired. Pair with a side of roasted vegetables or a light salad for a complete meal.
