1 cup rolled oats

1/2 cup almond butter (or any nut butter of choice)

1/2 cup freeze-dried strawberries (crushed)

1/3 cup unsweetened shredded coconut

1/4 cup honey or maple syrup (for vegan option)

1 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup mini dark chocolate chips (optional)

Extra shredded coconut for rolling (optional)

Prepare the Mixture: In a large mixing bowl, combine the rolled oats, crushed freeze-dried strawberries, shredded coconut, and salt. Mix well to ensure all dry ingredients are evenly distributed.

    Add Wet Ingredients: In a separate bowl, combine the almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth and creamy.

      Combine: Pour the wet mixture into the dry ingredients bowl. Mix thoroughly until everything is well combined. If using, fold in the mini chocolate chips for an added treat.

        Form the Balls: With your hands, take a small amount of the mixture (about a tablespoon) and roll it into a ball. If desired, roll the energy ball in extra shredded coconut for a fun finish. Repeat with the remaining mixture.

          Chill: Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.

            Store: Once chilled, transfer the energy balls to an airtight container and store in the fridge for up to one week or freeze for long-term storage.
