Ingredients

1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

1/4 cup soy sauce

1/4 cup mirin (sweet rice wine)

2 tablespoons brown sugar

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

2 tablespoons vegetable oil (for frying)

1/2 teaspoon sesame seeds (for garnish)

2 green onions, chopped (for garnish)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the soy sauce, mirin, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger until the sugar is dissolved and the mixture is well combined.

Marinate the Chicken: Add the bite-sized chicken pieces to the marinade, making sure each piece is well coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes to 1 hour for maximum flavor.

Cook the Chicken: In a large skillet or frying pan, heat the vegetable oil over medium-high heat. Once hot, add the marinated chicken pieces, ensuring they are spaced out so they can brown evenly. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.

Create the Sauce: Pour the remaining marinade into the skillet with the cooked chicken. Bring it to a gentle simmer. Stir in the cornstarch-water mixture to thicken the sauce, and let it bubble for about 2-3 minutes until the sauce reaches a sticky consistency that coats the chicken.

Garnish and Serve: Once the chicken is well coated with the sticky teriyaki glaze, remove from heat. Sprinkle with sesame seeds and chopped green onions for added flavor and color.

Plate the Dish: Serve the Sticky Teriyaki Glazed Chicken Bites warm, perhaps alongside steamed rice or a fresh vegetable salad. Enjoy the delightful flavors!
