Sticky BBQ Meatball & Mashed Potato Muffins

Ingredients
  

For the Meatballs:

1 pound ground beef or turkey

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon onion powder

Salt and pepper to taste

For the BBQ Sauce:

1 cup barbecue sauce (store-bought or homemade)

2 tablespoons honey

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

For the Mashed Potato Muffins:

2 cups mashed potatoes (prepared from scratch or store-bought)

1/2 cup shredded cheddar cheese

1/4 cup milk

2 tablespoons butter, melted

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat the Oven:

    Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or line it with muffin liners.

      Make the Meatballs:

        In a large bowl, combine the ground beef (or turkey), breadcrumbs, Parmesan cheese, egg, minced garlic, Worcestershire sauce, smoked paprika, onion powder, salt, and pepper. Mix well until all ingredients are combined.

          Shape the Meatballs:

            Roll the mixture into small meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.

              Prepare the BBQ Sauce:

                In a small saucepan over medium heat, combine the barbecue sauce, honey, apple cider vinegar, garlic powder, and onion powder. Stir frequently until warmed through. Remove from heat.

                  Bake the Meatballs:

                    Bake the meatballs in the preheated oven for about 20 minutes, or until they are cooked through (internal temperature should reach 165°F or 74°C). Once done, brush with the BBQ sauce and bake for an additional 5 minutes.

                      Prepare the Mashed Potato Muffins:

                        While the meatballs are baking, combine the mashed potatoes, shredded cheddar cheese, milk, melted butter, salt, and pepper in a large mixing bowl. Mix until smooth and creamy.

                          Assemble the Muffins:

                            Scoop a layer of the mashed potato mixture into the bottom of each muffin cup, then place a BBQ meatball on top, and cover with more mashed potatoes until the muffin tin is filled. Optional: sprinkle additional cheese on top.

                              Bake the Muffins:

                                Return the muffin tin to the oven and bake for an additional 15-20 minutes, or until the tops are golden and slightly crispy.

                                  Serve:

                                    Once baked, allow muffins to cool for a few minutes before gently removing them from the muffin tin. Garnish with fresh chives or parsley if desired, and serve warm.
