1 lb flank steak, trimmed

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

4 crusty rolls (such as ciabatta or hoagie)

1 cup arugula or spinach

1 large tomato, sliced

1 small red onion, thinly sliced

4 tablespoons mayonnaise

1 tablespoon Dijon mustard

Optional: sliced cheese (Swiss or provolone)

Instructions
 

Marinate the Steak: In a small bowl, combine olive oil, garlic powder, smoked paprika, salt, and pepper. Rub this mixture all over the flank steak. Let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for deeper flavor.

    Cook the Steak: Heat a grill or grill pan over medium-high heat. Once hot, add the marinated steak. Cook for about 5-7 minutes per side for medium-rare doneness (internal temperature of 130-135°F). Adjust cooking time to your preference. Remove from heat and let it rest for 5 minutes.

      Prepare the Rolls: While the steak is resting, cut the crusty rolls in half. Optionally, you can toast them lightly on the grill or in a toaster for extra crunch.

        Slice the Steak: After resting, slice the flank steak against the grain into thin strips.

          Assemble the Sandwich: Spread a tablespoon of mayonnaise and a teaspoon of Dijon mustard on the inside of each roll. Layer arugula or spinach, sliced steak, tomato, and red onion on the bottom half. If you’re using cheese, add it now.

            Finish It Off: Top with the other half of the roll. You can grill the entire sandwich for an additional 2-3 minutes to melt the cheese and warm it up.
