Ingredients

2 ribeye steaks (about 1 inch thick)

Salt and black pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh parsley (for garnish)

8 oz fettuccine pasta

1 cup spinach (fresh or thawed if using frozen)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.

Season the Steaks: While the pasta cooks, season the ribeye steaks generously with salt and black pepper on both sides.

Sear the Steaks: In a large skillet over medium-high heat, add olive oil. Once hot, add the steaks to the skillet. Cook for about 4-5 minutes on each side for medium-rare, or adjust cooking time to achieve your desired doneness. Once cooked, remove the steaks from the skillet, cover with foil, and let rest.

Make the Creamy Sauce: In the same skillet, reduce the heat to medium. Add the minced garlic and red pepper flakes; sauté for about 30 seconds until fragrant, being careful not to burn the garlic. Pour in the heavy cream and bring to a gentle simmer.

Finish the Sauce: Stir in the grated Parmesan cheese and lemon juice, mixing until the cheese is melted and the sauce is smooth. If the sauce is too thick, add reserved pasta water, a little at a time, until the desired consistency is reached. Fold in the spinach and cook until just wilted.

Combine Pasta and Sauce: Add the drained fettuccine to the skillet with the creamy sauce. Toss to combine and ensure the pasta is evenly coated.

Serve: Slice the rested steaks against the grain into thick strips. Plate the creamy pasta and top with the sliced steaks. Garnish with chopped parsley for a fresh touch.
