Sriracha Honey Shrimp Tacos

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons Sriracha sauce

2 tablespoons honey

1 tablespoon lime juice

2 cloves garlic, minced

Salt and pepper to taste

For the Slaw:

2 cups green cabbage, thinly shredded

1 cup carrots, grated

½ cup red onion, thinly sliced

¼ cup fresh cilantro, chopped

3 tablespoons lime juice

1 tablespoon honey

Salt and pepper to taste

For Serving:

8 small corn or flour tortillas

Lime wedges

Extra cilantro for garnish

Avocado slices (optional)

Prepare the Shrimp Marinade: In a large bowl, combine olive oil, Sriracha, honey, lime juice, minced garlic, salt, and pepper. Mix well and add the shrimp. Toss to coat evenly and let marinate for at least 15 minutes while preparing the slaw.

    Make the Slaw: In another bowl, mix together the cabbage, carrots, red onion, and cilantro. In a small bowl, whisk together lime juice, honey, salt, and pepper. Pour the dressing over the slaw and toss thoroughly. Adjust seasoning to taste and set aside.

      Cook the Shrimp: In a large skillet over medium-high heat, add the marinated shrimp. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque, and cooked through. Remove from heat.

        Warm the Tortillas: In a separate skillet or over an open flame, warm the tortillas until they are soft and pliable, about 30 seconds on each side.
