12 ounces of pasta (fettuccine or penne recommended)

1 cup sun-dried tomatoes (packed in oil, drained and chopped)

4 cups fresh spinach leaves, roughly chopped

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.
