Spinach and Feta Quesadillas

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

1 medium onion, finely diced

2 cloves garlic, minced

4 large flour tortillas

2 tablespoons olive oil

1/2 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Salsa or sour cream (for serving)

Instructions
 

Sauté the Veggies: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 4-5 minutes, until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Add the Spinach: Toss in the chopped spinach, dried oregano, red pepper flakes (if using), salt, and black pepper. Cook for 2-3 minutes until the spinach wilts down. Remove the skillet from heat and let it cool slightly.

      Mix with Cheese: In a large mixing bowl, combine the sautéed spinach mixture with the crumbled feta and shredded mozzarella. Mix until well combined.

        Prepare Quesadillas: Heat the remaining 1 tablespoon of olive oil in the skillet over medium heat. Place one tortilla in the skillet and spread a generous amount of the spinach and cheese mixture evenly over half of the tortilla. Fold the tortilla over to create a half-moon shape.

          Cook the Quesadilla: Cook for about 3-4 minutes on one side until golden brown. Carefully flip and cook for another 3-4 minutes on the other side until the cheese melts and the tortilla is crispy.

            Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Cut into wedges. Repeat the process with the remaining tortillas and filling mixture.

              Serve: Arrange the quesadilla wedges on a platter, garnish with chopped parsley, and serve warm with salsa or sour cream on the side.
