1 cup sushi rice

1 1/4 cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

1 lb sashimi-grade tuna, cubed

2 tablespoons soy sauce

1 tablespoon sriracha (adjust for more spice)

1 teaspoon sesame oil

1 avocado, sliced

1 small cucumber, spiralized or julienned

1/4 cup edamame, shelled

2 green onions, sliced

1 tablespoon sesame seeds

Nori sheets, cut into strips for garnish

Pickled ginger and wasabi (optional, for serving)

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a medium saucepan and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes. Remove from heat and let stand for 10 minutes.

    Season the Rice: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice, taking care not to mash the grains. Allow the rice to cool slightly.

      Make the Spicy Tuna: In a medium bowl, combine the cubed tuna with soy sauce, sriracha, and sesame oil. Gently mix until the tuna is well coated. Adjust sriracha according to your spice preference.

        Assemble the Bowls: In serving bowls, place a generous scoop of seasoned sushi rice as the base. Top with the spicy tuna mixture, arranged in the center.

          Add Toppings: Decorate your bowls with slices of avocado, spiralized cucumber, edamame, and sprinkle with green onions and sesame seeds. Use nori strips for garnish and add pickled ginger and wasabi on the side if desired.
