Spicy Soba Noodle Stir Fry

200g soba noodles

2 tablespoons sesame oil

1 medium onion, sliced

2 cloves garlic, minced

1-inch piece of ginger, grated

1 red bell pepper, thinly sliced

1 cup broccoli florets

1 cup snap peas

2 carrots, julienned

2 green onions, chopped

3 tablespoons soy sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon rice vinegar

1 tablespoon honey or agave syrup

Sesame seeds, for garnish

Fresh cilantro or parsley, for garnish

Instructions
 

Cook the noodles: Bring a large pot of water to a boil. Add the soba noodles and cook according to the package instructions until just al dente, about 4-5 minutes. Drain and rinse under cold water to stop cooking and set aside.

    Sauté the aromatics: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the sliced onion and sauté for 2-3 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for an additional 1 minute until fragrant.

      Add the vegetables: Add the sliced red bell pepper, broccoli florets, snap peas, and julienned carrots to the skillet. Stir-fry for 4-5 minutes, until the vegetables are tender yet crisp.

        Combine everything: Lower the heat slightly. Add the cooked soba noodles to the skillet along with the soy sauce, sriracha, rice vinegar, and honey. Toss everything together until the noodles are heated through and well-coated in the sauce.

          Final touches: Remove from heat and fold in the chopped green onions. Adjust seasoning as needed, adding more sriracha for heat or soy sauce for saltiness.

            Serve: Divide the spicy soba noodle stir fry among plates or bowls. Sprinkle with sesame seeds and garnish with fresh cilantro or parsley.
