Ingredients

2 cups fresh blueberries

1 cup coconut water (or plain water)

1-2 tablespoons honey or agave syrup (to taste)

1-2 teaspoons chili powder (adjust based on spice preference)

½ teaspoon fresh squeezed lime juice

Pinch of sea salt

Optional: Fresh mint leaves for garnish

Instructions

Prepare the Blueberries: Rinse the fresh blueberries well under cold water. Reserve a handful for garnish if desired.

Blend the Mixture: In a blender, combine the blueberries, coconut water, honey (or agave), chili powder, lime juice, and a pinch of sea salt. Blend on high until the mixture is smooth.

Taste Test: Taste the mixture and adjust the sweetness or spice level. For a spicier kick, add more chili powder.

Fill Popsicle Molds: Carefully pour the blueberry mixture into popsicle molds, leaving a little space at the top for expansion during freezing. If using, drop a few whole blueberries into each mold for decoration.

Insert Sticks: Place the popsicle sticks into the molds, ensuring they are centered and upright.

Freeze: Transfer the molds to the freezer and let them freeze for at least 4-6 hours, or until completely solid.

Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull out the popsicles. If desired, garnish with fresh mint leaves and additional blueberries before serving.

Enjoy: Savor the refreshing and spicy burst of flavors as you enjoy these unique blueberry popsicles!
