1 cup creamy peanut butter

3 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons rice vinegar

1 tablespoon sriracha (adjust for spice preference)

1 tablespoon honey or maple syrup (to taste)

2 garlic cloves, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

1/2 cup water (adjust for desired sauce consistency)

1 red bell pepper, thinly sliced

1 cup snap peas, trimmed

1/4 cup chopped green onions (for garnish)

1 tablespoon sesame seeds (for garnish)

Fresh cilantro leaves (optional, for garnish)

Instructions
 

Prepare the Zoodles: Using a spiralizer, create zucchini noodles (zoodles) and set them aside. Sprinkle a pinch of salt over them to draw out excess moisture.

    Make the Spicy Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, sriracha, honey or maple syrup, minced garlic, grated ginger, sesame oil, and water. Adjust the water to achieve your preferred sauce consistency. Set aside.

      Sauté the Veggies: In a large skillet or wok, heat a little sesame oil over medium-high heat. Add the sliced red bell pepper and snap peas. Stir-fry for about 3-4 minutes until they are just tender yet still crisp.
