2 large onions (yellow or red)

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp cumin powder

1 tsp paprika

1/2 tsp baking powder

1/2 tsp salt (or to taste)

1/4 tsp black pepper

1 cup buttermilk (or dairy-free alternative)

Instructions
 

Prepare the Onions:

    - Peel the onions and slice them into thin petals. To do this, cut each onion in half, then each half into thin slices, making sure not to cut all the way through at the root end so the petals remain connected at the base.

      Soak the Petals:

        - Place the sliced onion petals into a bowl of cold water and let them soak for about 30 minutes. This helps to reduce the sharpness and also makes them crispier when cooked.

          Make the Batter:

            - In a separate bowl, whisk together the all-purpose flour, cornstarch, cumin, paprika, cayenne pepper, garlic powder, onion powder, baking powder, salt, and black pepper.

              Combine with Buttermilk:

                - Gradually pour in the buttermilk while stirring the dry ingredients to create a smooth batter. The consistency should be thick enough to coat the onion petals without being too runny.

                  Heat the Oil:

                    - In a large, deep frying pan or pot, pour in enough oil for deep frying (about 2-3 inches deep) and heat it over medium-high heat until it reaches about 350°F (175°C).

                      Coat the Onion Petals:

                        - Take the soaked onion petals out of the water and pat them dry with a kitchen towel. Dip the onion petals into the batter, ensuring they are evenly coated.

                          Fry the Petals:
