Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup plant-based milk (almond, soy, or oat)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust based on spice preference)

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup hot sauce (like Frank's RedHot, adjust to taste)

2 tablespoons melted vegan butter (or regular butter)

Fresh chopped parsley (for garnish)

Optional: celery sticks and vegan ranch dressing for serving

Instructions

Preheat the Oven: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Batter: In a large mixing bowl, combine the flour, plant-based milk, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Whisk until smooth to create a thick batter.

Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it’s fully coated. Allow any excess batter to drip off before placing them on the prepared baking sheet. Arrange the florets so they are not touching for maximum crispiness.

Bake for Crispiness: Bake the coated cauliflower in the preheated oven for 20-25 minutes, or until they’re golden brown and crispy. Flip them halfway through for even cooking.

Prepare the Buffalo Sauce: While the cauliflower is baking, in a small bowl, whisk together the hot sauce and melted vegan butter until well combined.

Toss in Sauce: Once the cauliflower is crispy, remove them from the oven and drizzle the buffalo sauce over them. Toss carefully to ensure all florets are well coated in the spicy sauce.

Final Bake: Return the coated cauliflower to the oven for an additional 10 minutes to help the sauce adhere and enhance the flavor.

Serve: Once you have removed the cauliflower from the oven, garnish with fresh chopped parsley. Serve immediately with celery sticks and vegan ranch dressing on the side for dipping.
