Ingredients

2 cups fresh cherries, pitted and halved

1/4 cup granulated sugar

1 tablespoon cornstarch

1 teaspoon cinnamon

1/4 teaspoon cayenne pepper (adjust to taste)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 pre-made pie crust (store-bought or homemade)

1 egg (for egg wash)

1 tablespoon coarse sugar (for sprinkling)

Instructions

Prepare the Oven: Preheat your oven to 400°F (200°C).

Make the Filling: In a large mixing bowl, combine the pitted cherries, granulated sugar, cornstarch, cinnamon, cayenne pepper, lemon juice, and vanilla extract. Gently toss the ingredients to coat the cherries evenly. Set aside to allow the mixture to marinate for about 15 minutes.

Prepare the Pie Crust: Roll out your pie crust onto a parchment-lined baking sheet, shaping it into a rough circle (about 12 inches in diameter). Don’t worry about making it perfect; rustic edges add to the charm!

Assemble the Galette: Spoon the cherry mixture into the center of the pie crust, leaving about a 2-inch border around the edges. Carefully fold the edges of the crust over the filling, pleating it as you go to create a circle.

Apply Egg Wash: Beat the egg in a small bowl. Brush the egg wash over the folded crust to give it a beautiful golden color during baking.

Sprinkle Sugar: Sprinkle the coarse sugar over the crust for added texture and sweetness.

Bake the Galette: Bake in the preheated oven for 30-35 minutes or until the crust is golden brown and the cherries are bubbling.

Cool and Serve: Once baked, remove from the oven and let it cool for 10-15 minutes. Slice and serve warm, perhaps with a scoop of vanilla ice cream for an extra treat!
