Spicy Buffalo Cauliflower Bites

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

½ teaspoon salt

¾ cup water (or non-dairy milk for creaminess)

½ cup Frank's RedHot Sauce (or your favorite hot sauce)

2 tablespoons melted vegan butter (optional for richness)

Green onions, chopped (for garnish)

Celery sticks (for serving)

Vegan ranch dressing (for dipping)

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a large bowl, combine the cauliflower florets with the water (or non-dairy milk). Mix well to coat the florets.

      Make the Batter: In another bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, and salt. Gradually add the water (or milk) to the dry ingredients, whisking until you achieve a smooth batter. It should be thick enough to coat the cauliflower but not so thick that it's gloppy.

        Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing any excess to drip off. Place them evenly spaced on the prepared baking sheet.

          Bake the Bites: Bake in the preheated oven for 20-25 minutes, flipping the florets halfway through until they are golden brown and crispy.

            Prepare the Buffalo Sauce: While the cauliflower is baking, in a small saucepan over low heat, combine the Frank's RedHot Sauce and melted vegan butter. Stir until mixed and warmed through.

              Toss in Sauce: Once the cauliflower bites are done, remove them from the oven and transfer them to a large bowl. Pour the warm Buffalo sauce mixture over the bites and gently toss to coat.

                Return to Oven (Optional): For extra crispiness, return the coated cauliflower bites to the oven for an additional 5-10 minutes.
