Spiced Chickpea & Carrot Wraps with Yogurt Sauce

Ingredients
  

For the Wraps:

1 can (15 oz) chickpeas, drained and rinsed

1 large carrot, grated

1 small red onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust for spice)

1 tbsp olive oil

Salt and black pepper, to taste

1 cup fresh spinach or mixed greens

4 large whole wheat tortillas or flatbreads

For the Yogurt Sauce:

1 cup plain Greek yogurt

2 tbsp tahini

1 tbsp lemon juice

1 clove garlic, minced

Salt and pepper, to taste

Fresh dill or mint, for garnish (optional)

Instructions
 

Prepare the Chickpea Filling:

    - In a large bowl, mash the chickpeas gently with a fork or potato masher, leaving some texture.

      - Add the grated carrot, red onion, minced garlic, ground cumin, smoked paprika, cayenne pepper, olive oil, salt, and black pepper. Mix well until all ingredients are combined.

        Cook the Mixture:

          - Heat a skillet over medium heat. Add the chickpea mixture and cook for about 5-7 minutes, stirring occasionally, until heated through and the onions soften slightly. Remove from heat.

            Make the Yogurt Sauce:

              - In a small bowl, whisk together the Greek yogurt, tahini, lemon juice, minced garlic, salt and pepper until smooth. Adjust seasoning to taste. For an extra flair, stir in some chopped fresh dill or mint.

                Assemble the Wraps:

                  - Lay a tortilla flat on a clean surface.

                    - Start by placing a handful of fresh spinach or mixed greens in the center of the tortilla, followed by a generous scoop of the chickpea filling.

                      - Drizzle some yogurt sauce over the filling and fold in the sides of the tortilla before rolling it up tightly from the bottom.

                        Serve:

                          - Repeat the assembly process for the remaining tortillas.

                            - Cut the wraps in half diagonally and serve with extra yogurt sauce on the side for dipping.
