2 large carrots, grated

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon cumin powder

1 teaspoon coriander powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust for spice preference)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup chickpea flour (or all-purpose flour)

1 large egg, beaten

2 tablespoons fresh cilantro, chopped (or parsley)

3 tablespoons vegetable oil (for frying)

Optional: sour cream or yogurt for serving

Prepare the Carrots: In a large mixing bowl, combine the grated carrots, chopped onion, minced garlic, and grated ginger. Mix well until the vegetables are evenly distributed.

    Season the Mixture: Sprinkle in the cumin, coriander, smoked paprika, cayenne pepper, salt, and black pepper. Mix to ensure the spices are well incorporated into the vegetable mixture.

      Bind the Fritters: Add the chickpea flour and the beaten egg to the bowl. Stir until the mixture holds together. If it feels too loose, you can add a bit more flour to help form patties.
