Spaghetti with Lemon Basil Pesto

12 ounces spaghetti

1 cup fresh basil leaves, packed

1/2 cup fresh parsley leaves, packed

1/3 cup pine nuts (or walnuts)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1/2 cup extra-virgin olive oil

Salt and freshly ground black pepper, to taste

Cherry tomatoes, halved (for garnish)

Extra pine nuts and Parmesan cheese, for serving

Instructions
 

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the spaghetti and set it aside.

    Prepare the Pesto: In a food processor, combine the fresh basil, parsley, pine nuts, Parmesan cheese, minced garlic, lemon zest, and lemon juice. Pulse until finely chopped.

      Add Olive Oil: With the food processor running, slowly stream in the olive oil until the mixture is smooth and creamy. Stop to scrape down the sides as needed. Adjust the consistency with reserved pasta water for a silkier pesto if desired.

        Season: Taste the pesto and season with salt and black pepper to your liking.

          Combine Pasta and Pesto: In a large mixing bowl, combine the drained spaghetti and pesto. Toss well to coat the spaghetti evenly with the pesto. If the pasta seems dry, add more reserved pasta water a tablespoon at a time until you achieve your preferred consistency.

            Serve: Plate the spaghetti and garnish with halved cherry tomatoes, extra pine nuts, and a sprinkle of Parmesan cheese. Drizzle with a little olive oil if desired and enjoy your refreshing dish!
