Smoky Grilled Veggie Tacos

1 medium zucchini, sliced into half-moons

1 bell pepper (any color), sliced into strips

1 red onion, cut into wedges

1 cup corn kernels (fresh or frozen)

1 cup mushrooms, sliced (preferably portobello or shiitake)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

8 small corn or flour tortillas

1 avocado, sliced

Fresh cilantro leaves for garnish

Lime wedges for serving

Optional: 1/2 cup crumbled feta cheese or cotija for topping

Preheat the Grill: Heat your outdoor grill to a medium-high temperature. If using a grill pan indoors, heat it over medium heat.

    Prepare the Vegetables: In a large mixing bowl, combine the zucchini, bell pepper, red onion, corn, and mushrooms. Drizzle with olive oil, then sprinkle on the smoked paprika, cumin, chili powder, salt, and pepper. Toss until all the vegetables are evenly coated.

      Grill the Veggies: Place the seasoned vegetables directly on the grill or use a grill basket. Grill for about 10-12 minutes, turning occasionally, until the veggies are tender and have nice grill marks. Remove from heat.

        Warm the Tortillas: On the grill, place the tortillas for about 20-30 seconds on each side until warm and slightly charred. If you're using a grill pan, you can heat them briefly on both sides.

          Assemble the Tacos: On each tortilla, layer the grilled veggies, followed by avocado slices. If desired, sprinkle crumbled feta cheese or cotija on top and finish with fresh cilantro.
