To achieve the perfect smoky grilled corn, it’s essential to prepare your grill correctly. Start by preheating your grill to medium-high heat, which typically ranges from 375°F to 450°F. If you are using a gas grill, turn on all burners and allow it to heat for about 10-15 minutes with the lid closed. For charcoal grills, arrange the coals in a two-zone setup, allowing for direct and indirect heat.

Ingredients

4 ears of fresh corn, husked

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon sea salt

1 teaspoon black pepper

1/2 cup unsalted butter, softened

Zest and juice of 1 lime

1 teaspoon chili powder (adjust according to spice preference)

2 tablespoons fresh cilantro or parsley, chopped (for garnish)

Optional: crumbled feta or cotija cheese for topping

Instructions

Prepare the Grill: Preheat your grill to medium-high heat (about 400°F/200°C).

Season the Corn: In a large bowl, toss the husked corn with olive oil, smoked paprika, sea salt, and black pepper until well coated.

Grill the Corn: Place the seasoned corn directly onto the grill grates. Grill for about 10-12 minutes, turning every 2-3 minutes, until the corn is tender and has distinct grill marks.

Make the Chili-Lime Butter: While the corn is grilling, combine the softened butter, lime zest, lime juice, chili powder, and a pinch of salt in a small bowl. Mix well until fully blended.

Serve: Once the corn is done, remove it from the grill and brush generously with the chili-lime butter while still hot.

Garnish: Sprinkle chopped cilantro or parsley over the corn, and add crumbled feta or cotija cheese if desired for an extra kick of flavor.

Enjoy: Serve immediately while the corn is hot, and take advantage of the smoky, zesty flavors!
