1 cup stone-ground grits

4 cups chicken broth

1 cup shredded smoked Gouda cheese

1/2 cup grated Parmesan cheese

1 cup whole milk

4 slices of bacon, cooked and crumbled

3 tablespoons unsalted butter

1 small onion, finely chopped

2 garlic cloves, minced

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional for extra heat)

Salt and pepper to taste

2 large eggs, beaten

1/4 cup chopped fresh chives (for garnish)

Instructions
 

Cook the Grits: In a large pot, bring the chicken broth to a boil. Slowly whisk in the stone-ground grits. Reduce the heat to low and cook, stirring frequently, for about 20-25 minutes until thickened. If using instant grits, adjust the cooking time according to package instructions.

    Sauté Vegetables: In a skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Once the grits are cooked, stir in the sautéed onion and garlic mixture, smoked Gouda, Parmesan cheese, whole milk, crumbled bacon, smoked paprika, cayenne pepper, salt, and pepper. Mix well until the cheeses are melted and everything is combined.

        Prepare the Bake: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish. Stir the beaten eggs into the grits mixture until fully incorporated. Pour the grits mixture into the prepared baking dish and spread evenly.

          Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and set.

            Garnish: Once baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped chives before serving.
