2 large English cucumbers

1 cup Greek yogurt

1 clove garlic, minced

1 tablespoon fresh dill, chopped

1 tablespoon olive oil

1 tablespoon lemon juice

1/2 teaspoon smoked paprika

1/2 cup cherry tomatoes, diced

1/4 cup red onion, finely chopped

Fresh mint leaves, for garnish

Prepare the Cucumbers: Slice the cucumbers in half lengthwise. Using a small spoon, scoop out the seeds to create little boats. Place them cut side up on a platter.
