Smashed Avocado Tortilla Bowls

Ingredients
  

For the Tortilla Bowls:

4 large flour tortillas

1 cup shredded cheese (cheddar or Mexican blend)

2 tablespoons olive oil

Pinch of salt

For the Smashed Avocado Filling:

3 ripe avocados

1 small lime (juiced)

1 small garlic clove (minced)

1/4 tsp red pepper flakes (optional)

Salt and pepper to taste

For Toppings:

1 cup cherry tomatoes (halved)

1 cup corn (fresh, canned, or frozen)

1 cup black beans (drained and rinsed)

1/4 cup fresh cilantro (chopped)

1/2 cup diced red onion

Greek yogurt or sour cream, for serving

Extra lime wedges, for garnish

Instructions
 

Prepare the Tortilla Bowls:

    - Preheat your oven to 375°F (190°C).

      - Brush both sides of each flour tortilla lightly with olive oil and sprinkle a pinch of salt.

        - Drape a tortilla over the bottom of an oven-safe bowl or muffin tin to create the bowl shape. Use another oven-safe item to press down if needed.

          - Repeat for all tortillas and place them in the oven for about 10-12 minutes or until golden brown and crispy.

            - Once baked, carefully remove the tortilla bowls from the oven and let them cool.

              Make the Smashed Avocado Filling:

                - In a mixing bowl, scoop the ripe avocados and mash them lightly using a fork.

                  - Add lime juice, minced garlic, red pepper flakes, salt, and pepper. Mix until everything is well combined but still chunky. Adjust seasoning as needed.

                    Assemble the Tortilla Bowls:

                      - Once the tortilla bowls have cooled, fill each bowl with a generous layer of the smashed avocado filling.

                        - Top each bowl with cherry tomatoes, corn, black beans, diced red onion, and fresh cilantro.

                          Serve:
