Slow Cooker Hatch Chili Burrito Bowls

1 lb ground beef (or ground turkey for a lighter option)

1 medium onion, chopped

2 cloves garlic, minced

2 cups Hatch green chilies, roasted and diced (fresh or canned)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes, with juices

1 cup corn kernels (fresh, frozen, or canned)

2 tsp ground cumin

1 tsp smoked paprika

1 tsp chili powder

½ tsp salt (adjust to taste)

½ tsp black pepper

2 cups chicken or vegetable broth

4 cups cooked rice (white, brown, or cauliflower rice)

Optional toppings: shredded cheese, sour cream, avocado, fresh cilantro, lime wedges, tortilla chips

Instructions
 

Sauté the Aromatics: In a pan over medium heat, add a drizzle of olive oil. Once hot, add the chopped onion and minced garlic. Sauté for about 3-5 minutes until the onion is translucent.

    Brown the Meat: Add the ground beef (or turkey) to the pan with the onions and garlic. Cook until browned, breaking it apart with a spoon. Drain any excess fat.
