2 lbs beef chuck roast, cut into 1-inch cubes

1 lb baby potatoes, halved

8 cloves garlic, minced

½ cup unsalted butter, melted

1 small onion, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon smoked paprika

½ teaspoon salt (or to taste)

½ teaspoon black pepper

1 cup beef broth

Fresh parsley, chopped (for garnish)

Prepare Ingredients: Start by washing and halving the baby potatoes. Cut the beef chuck roast into 1-inch cubes and season with salt, pepper, thyme, rosemary, and smoked paprika.
