Slow Cooker Chicken Taco Soup

1 pound boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (15 oz) diced tomatoes with green chilies

1 packet taco seasoning (about 1 oz)

1 cup chicken broth

1 small onion, diced

1 bell pepper (any color), diced

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper, to taste

Optional toppings: sour cream, shredded cheese, fresh cilantro, avocado, lime wedges

Instructions
 

Sauté Vegetables: In a skillet over medium heat, warm the olive oil. Add the diced onion and bell pepper, sautéing until softened (about 3-5 minutes). Add the minced garlic and cook for an additional minute until fragrant.

    Combine Ingredients: In your slow cooker, add the sautéed vegetables, black beans, corn, diced tomatoes with green chilies, and chicken broth. Sprinkle in the taco seasoning and mix gently to combine.

      Prepare Chicken: Place the boneless chicken breasts on top of the mixture in the slow cooker. Ensure they are submerged in the liquid as much as possible.

        Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours. The chicken should be fully cooked and easily shreddable.

          Shred Chicken: Once cooked, remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken back to the pot and stir to combine everything well.
