2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces

4 medium carrots, sliced

1 large onion, diced

3 cloves garlic, minced

3 cups low-sodium chicken broth

1 cup frozen peas

1 cup green beans, cut into bite-sized pieces

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Season the chicken thighs with salt and pepper. Add them to the skillet and sauté until browned on all sides, about 5-7 minutes. Transfer the chicken to the slow cooker.

    Prepare the Vegetables: In the same skillet, add the diced onion, carrots, and potatoes. Sauté for another 3-4 minutes until the onions are translucent. Stir in the minced garlic, cooking for an additional 30 seconds until fragrant.

      Combine Ingredients: Transfer the sautéed vegetables to the slow cooker with the chicken. Add the frozen peas and green beans.
