Slow Cooker Charcuterie Chili

1 pound ground beef or ground turkey

1 cup diced smoked sausage (such as kielbasa or chorizo)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) diced tomatoes, undrained

1 can (6 oz) tomato paste

1 cup beef broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for desired spice level)

Salt and pepper to taste

1 cup shredded cheddar cheese (for serving)

½ cup sliced green onions (for garnish)

Fresh cilantro (optional, for garnish)

Your favorite charcuterie accompaniments (e.g., sliced pepperoni, prosciutto, olives)

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef (or turkey) and diced smoked sausage until cooked through, about 5-7 minutes. Drain any excess grease and transfer to the slow cooker.

    Sauté the Aromatics: In the same skillet, add the diced onion and garlic. Sauté for about 3-4 minutes until the onion is translucent. Add to the slow cooker.

      Combine Ingredients: In the slow cooker, add the black beans, kidney beans, diced tomatoes (with juice), tomato paste, beef broth, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir well to combine all the ingredients.

        Cook the Chili: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chili is bubbly and flavorful.

          Serve & Garnish: Once finished cooking, taste and adjust seasoning if needed. Ladle the chili into bowls and top each serving with shredded cheddar cheese, sliced green onions, and cilantro if desired.
