Ingredients

4 bone-in, skin-on chicken thighs

1/2 cup balsamic vinegar

1/4 cup honey

4 cloves garlic, minced

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon red pepper flakes (optional, for a hint of spice)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 cup cherry tomatoes, halved

Fresh basil, for garnish

Instructions

Prepare the Chicken: Start by patting the chicken thighs dry with paper towels. This helps them sear better and achieve a nice texture. Season them on both sides with salt and black pepper.

Sear the Thighs: In a skillet over medium-high heat, add the olive oil. Once hot, place the chicken thighs skin-side down and sear for about 5-7 minutes until golden brown. Flip and sear the other side for an additional 5 minutes. This step is optional but adds great flavor.

Mix the Sauce: In a medium bowl, whisk together the balsamic vinegar, honey, minced garlic, Dijon mustard, dried thyme, dried rosemary, and red pepper flakes (if using) until well combined. The mixture should be smooth and slightly viscous.

Build the Slow Cooker Layer: Place the seared chicken thighs in the slow cooker, skin-side up. Pour the balsamic mixture over the chicken, making sure each piece is well coated. Scatter halved cherry tomatoes around the chicken for added flavor and freshness.

Cook: Cover the slow cooker and set it on low for 6-7 hours or high for 3-4 hours. The chicken should be tender and easily pull apart with a fork when fully cooked.

Final Touches: Once done, carefully remove the chicken thighs and tomatoes from the slow cooker. If desired, you can thicken the sauce by pouring it into a small saucepan and simmering it over medium heat for about 5-10 minutes until reduced.

Serve: Plate the chicken thighs and spoon over the tomatoes and reduced balsamic sauce. Garnish with fresh basil before serving for a pop of color and brightness.
