Simple Grilled Zucchini Parmesan

3 medium zucchinis, sliced lengthwise into 1/4-inch thick strips

1/4 cup extra virgin olive oil

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, thyme, basil mix)

Salt and black pepper, to taste

1 cup shredded Parmesan cheese

1/2 cup breadcrumbs (panko for extra crunch)

1 tablespoon fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for a spicy kick

Prep the Zucchinis: Place the zucchini slices in a large mixing bowl. Drizzle with olive oil and add minced garlic. Sprinkle with dried Italian herbs, salt, and black pepper. Toss gently until all zucchini slices are well coated.

    Preheat the Grill: Preheat your grill to medium-high heat. You want it hot enough to create nice grill marks and cook the zucchini evenly.

      Grill the Zucchini: Place zucchini slices on the grill in a single layer. Grill for about 3-4 minutes per side, or until they are tender and have nice grill marks. Remove from the grill and set aside.
