1 cup fresh orange juice (from about 3-4 large oranges)

Zest of 2 oranges

1/2 cup granulated sugar

1/4 cup coconut cream (full-fat, chilled)

1/2 cup Greek yogurt (plain or vanilla)

1/4 cup heavy cream

2 tablespoons cornstarch

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional: Orange slices for garnish

Prepare the Orange Juice: Squeeze enough oranges to yield 1 cup of fresh juice, then zest two of the oranges, setting the zest aside for later use.

    Make the Base Mixture: In a medium saucepan over medium heat, combine the orange juice, sugar, and coconut cream. Stir until the sugar dissolves.

      Thicken the Mixture: In a small bowl, whisk together the cornstarch with a few tablespoons of cold water until smooth. Gradually whisk this slurry into the orange mixture in the saucepan. Stir continuously for about 3-5 minutes until the mixture thickens slightly.

        Add Cream and Yogurt: Remove the saucepan from heat, then stir in Greek yogurt, heavy cream, orange zest, vanilla extract, and salt. Mix until well combined and smooth.

          Pour into a Pan: Pour the mixture into an 8x8-inch baking pan lined with parchment paper. Spread it out evenly.

            Freeze the Bars: Cover the pan with plastic wrap and place it in the freezer for at least 4 hours, or until fully set. For the best results, freeze overnight.

              Cut and Serve: Once set, remove the bars from the pan using the parchment paper. Cut into squares or rectangles. If desired, garnish with small orange slices.
