2 cups heavy cream

1 cup whole milk

1/2 cup granulated sugar

1 tablespoon gelatin powder

3 tablespoons cold water

1 teaspoon vanilla extract

Pinch of salt

For the Caramel Sauce:

1 cup granulated sugar

1/4 cup water

1/2 cup heavy cream (warm)

1 tablespoon unsalted butter

1/2 teaspoon sea salt (optional)

For the Banana Topping:

2 ripe bananas, sliced

1 tablespoon lemon juice

Instructions
 

Bloom the Gelatin:

    - In a small bowl, sprinkle the gelatin over cold water. Let it sit for about 5-10 minutes until it blooms and becomes gelatinous.

      Heat the Cream Mixture:

        - In a saucepan, combine the heavy cream, whole milk, sugar, vanilla extract, and a pinch of salt. Heat over medium heat, stirring occasionally, until the mixture is warm and the sugar has completely dissolved. Do not let it boil.

          Combine Gelatin and Cream:

            - Remove the saucepan from heat. Stir the bloomed gelatin into the warm cream mixture until completely dissolved and well combined.

              Pour into Molds:

                - Carefully pour the panna cotta mixture into individual serving cups or molds. Allow them to cool for a few minutes at room temperature, then refrigerate for at least 4 hours, or until set.

                  Prepare Caramel Sauce:

                    - In a medium saucepan, heat sugar and water over medium heat. Stir gently until the sugar dissolves and turns a golden caramel color (about 10 minutes).

                      - Remove from heat and slowly whisk in the warm heavy cream. Be cautious, as the mixture will bubble vigorously. Then stir in the butter and sprinkle with sea salt (if using). Let it cool to room temperature.

                        Prepare Banana Topping:

                          - In a small bowl, toss the banana slices with lemon juice to prevent browning.

                            Assemble the Dessert:

                              - Once the panna cotta has set, carefully remove from the molds (if using). Top each panna cotta with a few slices of banana and drizzle the caramel sauce over them.
