Shrimp Tomato Spinach Pasta in Garlic Butter Sauce

8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

2 cups fresh spinach

1 cup cherry tomatoes, halved

6 cloves garlic, minced

1/4 cup unsalted butter

1/4 cup olive oil

1/2 tsp red pepper flakes (adjust for spice preference)

1/2 tsp salt

1/4 tsp black pepper

Juice of 1 lemon

1/4 cup freshly grated Parmesan cheese

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti or linguine according to package directions until al dente. Drain, reserving about 1 cup of pasta water, and set aside.

    Sauté the Garlic: In a large skillet over medium heat, melt the butter and olive oil together. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes or until fragrant, being careful not to burn the garlic.

      Cook the Shrimp: Add the shrimp to the skillet and season with salt and black pepper. Cook for about 2-3 minutes on each side, or until the shrimp turns pink and is opaque. Remove the shrimp from the skillet and set aside.

        Add Tomatoes and Spinach: In the same skillet, add the halved cherry tomatoes. Cook for about 3-4 minutes, until they begin to soften. Then, add the fresh spinach and cook until wilted, about 2 minutes.

          Combine Ingredients: Return the cooked shrimp to the skillet along with the drained pasta. Pour in the lemon juice and about 1/2 cup of the reserved pasta water. Toss everything together, adding more pasta water if needed to create a light sauce. Cook for an additional 2 minutes to heat through.

            Serve: Remove from heat and stir in the grated Parmesan cheese until melted. Taste and adjust seasoning if necessary. Serve immediately, garnished with fresh basil leaves if desired.
