8 oz linguine pasta

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

3 tablespoons extra virgin olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/2 cup dry white wine (such as Sauvignon Blanc)

Juice of 1 lemon

Zest of 1 lemon

1/4 cup flat-leaf parsley, chopped

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Lemon wedges, for garnish

Instructions
 

Cook the Linguine: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Reserve 1/2 cup of the pasta water and then drain the rest. Set the linguine aside.

    Sauté the Shrimp: In a large skillet, melt the butter and olive oil over medium heat. Add the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant. Be careful not to burn the garlic.

      Add the Shrimp: Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and pepper. Cook for about 2-3 minutes on one side until they begin to turn pink, then flip and cook for another 2 minutes.

        Deglaze the Pan: Pour in the white wine, scraping up any brown bits from the bottom of the skillet. Let the wine simmer for about 2 minutes to reduce slightly.

          Finish the Sauce: Stir in the lemon juice and zest, along with half of the chopped parsley. Add the drained linguine to the skillet, tossing to combine. If the pasta seems dry, gradually add some of the reserved pasta water until you reach your desired consistency.

            Serve: Off the heat, taste the dish and adjust the seasoning with more salt and pepper if necessary. Plate the shrimp scampi linguine, garnishing with the remaining parsley, a sprinkle of Parmesan cheese, and lemon wedges on the side.
