Shrimp Rice Bowls with Creamy Spicy Mayo

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon cayenne pepper (adjust for heat)

Salt and pepper, to taste

For the Rice:

1 cup jasmine or basmati rice

2 cups water or low-sodium chicken broth

1 teaspoon salt

For the Creamy Spicy Mayo:

½ cup mayonnaise

2 tablespoons sriracha (or to taste)

1 teaspoon lime juice

1 teaspoon soy sauce

1 teaspoon honey (optional)

Toppings:

1 avocado, sliced

1 cup shredded carrots

1 cup sliced cucumber

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Rice:

    - Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, water (or broth), and salt. Bring to a boil over medium-high heat, then reduce to a simmer. Cover and cook for 15-20 minutes, or until the liquid is absorbed and the rice is tender. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.

      Marinate the Shrimp:

        - In a bowl, combine the shrimp with olive oil, paprika, garlic powder, cayenne pepper, salt, and pepper. Mix well to coat the shrimp evenly. Let marinate for about 10-15 minutes.

          Make the Creamy Spicy Mayo:

            - In a small mixing bowl, whisk together the mayonnaise, sriracha, lime juice, soy sauce, and honey (if using) until smooth. Adjust the spiciness by adding more sriracha according to your taste. Set aside.

              Cook the Shrimp:
