1 lb large shrimp, peeled and deveined

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon lime juice

2 cups fresh watermelon, cubed

1 tablespoon honey (or maple syrup for a vegan option)

1 tablespoon rice vinegar

1 teaspoon cornstarch mixed with 2 teaspoons water (slurry for thickening)

Pinch of salt

For the Wraps:

1 head of butter or iceberg lettuce, separated into leaves

½ cup red bell pepper, finely diced

½ cup cucumber, finely diced

¼ cup scallions, chopped

1 tablespoon sesame seeds (optional for garnish)

Fresh cilantro leaves for garnish

Prepare the Watermelon Glaze: In a blender, puree the fresh watermelon until smooth. Strain through a fine mesh sieve into a small saucepan to remove pulp, if desired. You should have about 1 cup of watermelon juice.
