Ingredients

1 cup fresh ricotta cheese

2 tablespoons extra-virgin olive oil

1 tablespoon honey

1 teaspoon fresh lemon juice

1 clove garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and freshly cracked black pepper, to taste

1/4 teaspoon red pepper flakes (optional for a kick)

Fresh herbs (like basil or parsley) for garnish

Fresh crusty bread or crostini for serving

Instructions

Prepare the Ricotta: In a mixing bowl, add the fresh ricotta cheese. Using a hand mixer or a whisk, blend the ricotta until it’s smooth and creamy. This should take about 1-2 minutes.

Add Flavor: Drizzle in the olive oil, honey, and lemon juice. Add the minced garlic, thyme, salt, pepper, and red pepper flakes (if using). Mix until all ingredients are well combined and the mixture is creamy and smooth.

Taste and Adjust: Give your whipped ricotta a taste and adjust the seasoning if necessary. You can add more honey for sweetness, more lemon juice for acidity, or more herbs to enhance the flavor.

Chill: Transfer the seasoned whipped ricotta to a serving bowl. Cover with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld.

Serve: When ready to serve, remove from the fridge and give it a quick stir. Drizzle a bit more olive oil on top, sprinkle with fresh herbs, and additional black pepper if desired. Serve with fresh crusty bread or toasted crostini alongside.
