2 medium zucchinis (zoodles made using a spiralizer)

1 cup grated Parmesan cheese

1 cup finely chopped spinach (fresh or frozen, thawed and drained)

1/2 cup almond flour

3 large eggs

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon baking powder

1/4 teaspoon red pepper flakes (optional, for a kick)

Salt and black pepper to taste

Olive oil spray or muffin liners for greasing

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil spray or line with muffin liners.

    Prepare the Zoodles: If you haven't already made the zoodles, use a spiralizer on your zucchinis, then place them in a clean cloth and wring out the excess moisture. This prevents the muffins from becoming too soggy.

      Mix Ingredients: In a large mixing bowl, combine the grated zoodles, Parmesan cheese, chopped spinach, almond flour, garlic powder, onion powder, baking powder, red pepper flakes (if using), salt, and black pepper. Mix well to ensure all ingredients are evenly incorporated.

        Add Eggs: Crack the eggs into the mixture and stir until everything is well combined. The mixture should be thick but cohesive.

          Fill Muffin Tins: Scoop the zoodle mixture into the prepared muffin tins, filling each cup about 2/3 full.

            Bake: Place the muffin tin in the preheated oven and bake for about 25-30 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.

              Cool and Serve: Once done, remove the muffin tin from the oven and let it cool for about 5 minutes. Carefully pop the muffins out of the tin and allow them to cool completely on a wire rack.
