1 lb (450g) ground beef (80/20)

1 cup finely chopped fresh mushrooms (like cremini or button)

1/4 cup finely chopped onion

1 clove garlic, minced

1 tsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1/2 tsp dried thyme (optional)

4 slices Swiss cheese

4 burger buns (preferably brioche)

For the Toppings:

Fresh arugula or lettuce

Sliced tomatoes

Sliced pickles

Optional condiments: mayonnaise, mustard, or ketchup

Prepare the Mushroom Mixture: In a skillet over medium heat, melt a tablespoon of butter or oil. Add the finely chopped mushrooms, onion, and minced garlic. Sauté for about 5-7 minutes until the mushrooms are browned and the onion is translucent. Remove from heat and let cool slightly.

    Mix the Burger Patties: In a large bowl, combine the ground beef with the sautéed mushroom mixture, Worcestershire sauce, salt, pepper, and dried thyme if using. Gently mix until just combined. Avoid overmixing to keep the burgers tender.

      Form the Patties: Divide the mixture into four equal portions and shape them into patties that are slightly larger than your burger buns (they will shrink slightly during cooking). Create a small indentation in the center of each patty with your thumb (this helps them cook evenly).

        Cook the Patties: Preheat a grill or a skillet over medium-high heat. If using a skillet, add a small drizzle of oil. Cook the patties for about 4-5 minutes on one side, then flip them.
