Savory Eggplant Lasagna Roll-Ups

Ingredients
  

2 medium eggplants, sliced lengthwise into 1/4-inch thick strips

1 tablespoon olive oil

1 teaspoon salt

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (homemade or store-bought)

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon black pepper

Fresh basil leaves for garnish

Instructions
 

Prepare the Eggplant:

    - Preheat the oven to 400°F (200°C).

      - Place the sliced eggplant on a baking sheet lined with parchment paper. Brush both sides lightly with olive oil and sprinkle with salt.

        - Roast in the oven for 20-25 minutes, flipping halfway through, until the eggplant is tender and slightly golden. Remove from oven and set aside.

          Make the Cheese Filling:

            - In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, grated Parmesan cheese, egg, garlic powder, oregano, and black pepper. Mix well until smooth and creamy.

              Assemble the Roll-Ups:

                - Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.

                  - Take a slice of roasted eggplant, spoon about 2 tablespoons of the cheese mixture onto one end, and roll it up tightly. Place the roll seam side down in the baking dish.

                    - Repeat with the remaining eggplant slices and cheese filling.

                      Top with Sauce and Cheese:

                        - Once all the roll-ups are in the dish, pour the remaining marinara sauce over the top. Sprinkle the remaining mozzarella cheese evenly over the sauce.

                          Bake the Dish:

                            - Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and lightly golden.

                              Garnish and Serve:

                                - Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
