Savory Breakfast Burritos

4 large flour tortillas

6 large eggs

1 cup cooked chorizo (or your choice of protein)

1 cup shredded cheddar cheese

1 medium onion, diced

1 bell pepper (red or green), diced

1 ripe avocado, diced

1 cup baby spinach

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

Olive oil for cooking

Salsa or hot sauce for serving (optional)

Instructions
 

Prep the Ingredients: Gather all your ingredients. Dice the onion, bell pepper, and avocado; chop the cilantro; and if not done already, cook the chorizo until browned in a skillet over medium heat. Drain excess fat if necessary.

    Sauté the Vegetables: In the same skillet used for chorizo, add a little olive oil. Sauté the diced onion and bell pepper over medium heat until softened and slightly caramelized, about 5-7 minutes. Season with cumin, smoked paprika, salt, and pepper.

      Scramble the Eggs: In a mixing bowl, whisk together eggs, adding a pinch of salt. Pour the eggs into the vegetable mixture. Stir gently and cook until eggs are just set, around 3-4 minutes. Remove from heat.

        Assemble the Burritos: Warm the flour tortillas in a pan or microwave for a few seconds until pliable. Spread a generous spoonful of chorizo on each tortilla, followed by the egg and vegetable mixture. Add a handful of baby spinach, sprinkle shredded cheddar cheese, and top with diced avocado and chopped cilantro.

          Roll the Burritos: Fold in the sides of the tortilla, then roll it up from the bottom to the top to enclose the filling completely. Repeat with remaining tortillas.

            To Grill or Toast (Optional): Wipe the skillet clean and lightly oil it. Place each burrito seam-side down in the skillet. Cook for 2-3 minutes on each side until golden brown and crispy.

              Serve: Slice the burritos in half if desired and serve warm with salsa or hot sauce on the side.
