Sausage Green Bean Potato Casserole

1 lb smoked sausage, sliced into rounds (choose your favorite type, like kielbasa or andouille)

4 cups fresh green beans, trimmed and halved

4 medium potatoes, diced (about 4 cups, use Yukon Gold or red potatoes for best results)

1 medium onion, diced

3 cloves garlic, minced

1 cup shredded sharp cheddar cheese

1 cup whole milk or heavy cream

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon butter (for greasing the casserole dish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare Veggies and Sausage: In a large skillet over medium heat, add the olive oil. Sauté the sausage slices until they are nicely browned, about 5-7 minutes. Remove them from the skillet and set aside. In the same skillet, add the diced onion and garlic, cooking until the onions are translucent.

      Combine Ingredients: In a large mixing bowl, combine the sautéed sausage, cooked onions and garlic, diced potatoes, and green beans. Add the dried thyme, paprika, salt, and pepper. Mix thoroughly to ensure everything is evenly seasoned.

        Prepare the Casserole Dish: Grease a 9x13-inch casserole dish with butter. Pour the sausage and vegetable mixture into the dish.

          Create the Creamy Sauce: In a separate bowl, mix the milk or heavy cream with half of the shredded cheese (½ cup). Stir to combine, then pour this mixture evenly over the sausage and vegetable mixture in the casserole dish.

            Top with Cheese: Sprinkle the remaining ½ cup of shredded cheese over the top of the casserole.

              Bake: Cover the casserole dish with aluminum foil and place it in the preheated oven. Bake for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown.

                Cool and Serve: Remove the casserole from the oven and let it sit for about 5-10 minutes before serving. This allows the sauce to thicken slightly for easier serving.
