For the Salmon:

4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro for garnish (optional)

For the Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, finely chopped

1/2 red onion, finely chopped

1 jalapeño, seeded and minced (adjust for spice preference)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Instructions
 

Prepare the Mango Salsa:

    - In a medium bowl, combine the diced mango, chopped red bell pepper, finely chopped red onion, and minced jalapeño.

      - Add the chopped cilantro and lime juice, then season with salt to taste. Gently mix to combine all ingredients. Let it sit for at least 15 minutes at room temperature to allow the flavors to meld.

        Prepare the Salmon:

          - Preheat your grill or oven to 400°F (200°C).

            - Pat the salmon fillets dry with paper towels and place them in a baking dish or on a platter.

              - Drizzle olive oil over the salmon fillets. Rub each fillet with garlic powder, paprika, salt, and pepper to taste.

                - Squeeze lime juice over the fillets.

                  Cook the Salmon:

                    - If grilling, place the salmon skin-side down on the preheated grill and cook for about 5-7 minutes per side or until the salmon flakes easily with a fork.

                      - If baking, place the salmon in the preheated oven and bake for about 12-15 minutes, or until cooked through and flaky.

                        Assemble the Dish:

                          - Once the salmon is cooked, remove it from the heat. Serve each fillet topped generously with mango salsa.

                            - Garnish with fresh cilantro for added color and flavor.
