1 lb fresh salmon fillet, cut into 1-inch cubes

2 tablespoons olive oil

1 tablespoon freshly squeezed lemon juice

1 tablespoon freshly squeezed orange juice

2 teaspoons honey

Salt and pepper to taste

1 teaspoon smoked paprika

1 cup fresh blueberries, rinsed and drained

1/4 cup red onion, finely chopped

1 jalapeño pepper, seeded and finely diced

1/4 cup fresh cilantro, chopped

1 lime, juiced

Salt to taste

Wooden or metal skewers (if using wooden, soak in water for 30 min)

Instructions
 

Marinate the Salmon: In a medium bowl, whisk together olive oil, lemon juice, orange juice, honey, salt, pepper, and smoked paprika. Add the salmon cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

    Prepare the Blueberry Salsa: In a separate bowl, combine the fresh blueberries, red onion, jalapeño, cilantro, and lime juice. Gently mix until well combined and season with a pinch of salt. Set aside to let the flavors develop.

      Preheat the Grill: Preheat your grill or grill pan to medium-high heat. If using a grill, ensure the grates are well-oiled to prevent sticking.

        Assemble the Skewers: Thread the marinated salmon cubes onto the skewers, leaving a little space between each piece to ensure even cooking.
