Salmon Patties with Lemon Garlic Sauce

Ingredients
  

2 cans (14.75 oz each) salmon, drained and flaked

1 cup breadcrumbs (Panko or regular)

1/4 cup green onions, finely chopped

1/4 cup red bell pepper, finely diced

2 large eggs, beaten

1 tablespoon Dijon mustard

1 teaspoon Old Bay seasoning

Salt and pepper to taste

2 tablespoons olive oil (for frying)

For the Lemon Garlic Sauce:

1/2 cup mayonnaise

2 tablespoons fresh lemon juice

1 clove garlic, minced

1 teaspoon lemon zest

Salt and pepper to taste

Instructions
 

Prepare the Salmon Patties:

    In a large mixing bowl, combine the flaked salmon, breadcrumbs, green onions, red bell pepper, beaten eggs, Dijon mustard, Old Bay seasoning, salt, and pepper. Mix until all the ingredients are well incorporated.

      Form the Patties:

        Divide the salmon mixture into 8 equal portions. With your hands, shape each portion into a patty, about 1/2 inch thick.

          Cook the Patties:

            Heat olive oil in a large skillet over medium heat. Once hot, add the salmon patties, cooking for about 4-5 minutes on each side, or until they are golden brown and heated through. Adjust the heat as necessary to prevent burning.

              Make the Lemon Garlic Sauce:

                In a small bowl, whisk together mayonnaise, lemon juice, minced garlic, lemon zest, salt, and pepper. Adjust seasoning to taste.

                  Serve:

                    Place the cooked salmon patties on a serving platter. Drizzle with lemon garlic sauce and garnish with additional lemon wedges and fresh herbs like parsley or dill if desired.
